Corn Dogs More Healthy than Store Bought

Yes, I'm a softy as a mother and I give in to their desire for Corn Dogs. However, the store bought ones give me the willies not knowing what's in them things! So I've sought to learn to make all those convenience foods at home instead. You know things like chicken nuggets and corn dogs.


Today it's corn dogs!

Corn Bread Mix
4 C flour
4 C yellow cornmeal (if you have a NutriMIll grind up some organic popcorn for this - works great)
2 C milk powder or buttermilk powder
2/3 C sugar
4 T baking powder
1 T salt
1 T baking soda

In a large bow combine all ingredients. Stir with a wire whisk until evenly distributed. Pour into a container with a tight fitting lid. I use a half gallon canning jar. Store in a cool, dry place. This has a shelf life of at least 10 - 12 weeks.

CORN DOGS

vegetable oil for frying
4 hot dogs (we always double the recipe and it comes out perfect for a package of 8 dogs)
1/4 C corn bread MIX from above
2 T flour
1/8 tsp dry mustard
pinch of paprika
1 egg slightly beaten
1 T water

Pour oil 2 - 3" deep and heat it in a heavy pan.
Dry hotdogs with a towel.
In a pie plate combine MIX, flour, dry mustard, and paprika.
Stir in egg and water until thoroughly combined. Batter will be stiff.
Roll hotdogs in batter, covering completely.
Use tongs to lower into hot oil. Turning once, fry until golden brown, 2 - 3 minutes.
